So by nowwe’ve just accepted that Rachael Ray will never adopt a plant-based diet. That said, we are impressed that she’s always trying to include the vegetarians.

Ray recently threw a party at the annual South By Southwest music festival in Austin, Texas and chose to make a vegetarian dish — something she says is pretty typical for her. Ray told the Wall Street Journal, “I always do a meat, a vegetarian and a poultry item.”

What exactly did she make, you ask? Vegetarian taquitos — a rolled-up corn tortilla filled with yummy ingredients.

And let me tell you, homegirl can cook some veggies! I once ordered the vegan option at a party she catered and was surprised at how delicious it was.

Could a vegetarian restaurant lie in Rachael Ray’s future. We sure hope the answer is yes!

    We all love when a meat-eater takes the time to promote vegetarian options. It’s great that we can go to an event like South By Southwest and actually have something tasty to try that isn’t just a salad. However, I have to say that I’m a little disappointed that Ecorazzi is choosing to focus, primarily, on the positive aspect of Rachel Ray when there is a whole lot more to talk about. Her comment about always making sure to include a vegetarian option seems to be little more than veg or green washing, especially since her company produces kitchen products that are completely unnecessary. For example, I was recently in a home supply store and saw a melamine bowl (read: not environmentally friendly) for sale called the Garbage Bowl. I thought to myself what is that, so I turned the packaging over to read more about it. Apparently, it’s meant to stay on your counter and act as a receptacle for veggie and other food scraps, so that you can save time going back and forth to the garbage. Imo, it’s a complete waste of money and just adds to the unnecessary plastics that are spoiling our natural environment and contributing to climate change. Perhaps a little less rah rah Rachel Ray is in order….
