It’s the New Year and our first giveaway of 2011! To celebrate, we’re thinking food — deliciously yummy, “I can’t believe it’s vegan” food — and to help us go from grocery store to the dinner table is the newly released cookbook “The Happy Herbivore: Over 175 Delicious Fat-Free & Low-Fat Vegan Recipes” by Lindsay Nixon.

If that title sounds familiar, then you’ve probably already visited the super-popular Happy Herbivore website, which features over 100 vegan recipes and is the inspiration behind the book. Needless to say, we’re excited to see Lindsay making the leap into publishing — and think you’ll absolutely love this new book; loaded with beautiful photographs, easy-to-source ingredients and simple recipes. (To get a sample of some of the meals featured, jump here!)

Ok, feeling hungry to win? We’ll be giving away two copies on Twitter and one here below in the comments.

1.) Join Twitter (if you haven’t already).
2.) Follow @ecorazzi on Twitter.
3.) At 1pm tomorrow (01/14) EST, we’ll send out a contest message. All you have to do is re-tweet that contest message and add it to your updates. (Limit 5 RTs per user.)

    I am just SO impressed with Lindsay Nixon (Happy Herbivore author) and her life path to where she is now. Starting out as a high powered lawyer in a high power law firm, finding she hated it, and being open to what her passion really was.

    She has designed her recipes to be easy, delicious, and very approachable for the non-cook. We need lots more folks like her!

    I am and always have been a lover of food. The common misconception with many not well acquainted with the vegan lifestyle is one lives on “peas and carrots”. I like breaking this mold as a soul chef in the kitchen and am always looking for new recipes to “wow” not only my pallet but the pallet of those around me. The most exciting things about being vegan are the endless possibilities and discoveries that can be made every day!     In 2010, I became master of my own kitchen and fell in love with cooking. In 2011, I’ve vowed to go strictly vegetarian (and gradually vegan), but as of yet I own no cookbooks that will suit my new eating style. I love Lindsay’s style because she provides recipes for simple, comforting foods (BBQ wraps, potato salad, etc). This cookbook would give me the opportunity to expose my roommates to the delicious possibilities of veganism without scaring them off. They tend to shy away from food groups that don’t include ramen noodles and Cap’N Crunch ;)

    I signed up for the Dirt! Also – Why wouldn’t you want this cookbook? I happily stumpled upon Lindsay almost 2 years ago and she has always been so amazing when I have questions on recipies. I have all of her e cook books (lucky me because they are not for sale anymore!) and I really consider her a friend now. I can only imagine making anything from her book with be a great experience because it will be like having a friend over for dinner.

    I actually ordered 2 copies already, but I would love another to give away to my sister.

    I’ve been a vegetarian for a few years and have been transitioning to vegan over the past few months. My family, still omni’s, are willing to transition over too, but are having trouble enjoying the recipes I make unless they are loading with fat. I would love to learn some new tasty lowfat recipes that we all can enjoy together, and be healthier for it!
