Dave Soleil creates vegan marshmallow recipe

Summer isn’t the same without roasting marshmallows around the fire and creating sticky, gooey and delicious S’mores. However, if you’re vegan you probably would like to create this traditional campfire treat using vegan marshmallows. Well, now you can cook up your own sugar confection thanks to Dave Soleil.

Soleil’s “open source” vegan marshmallow recipe was first started in 2009, when he researched molecular gastronomy, hydrocolloids and gelatin-based marshmallows to help create his masterpiece. He then encouraged others to contribute improvements and tips on his Vegan Marshmallows blog, to ensure the recipe was just right.

This is the perfect recipe, not only for vegans, but for those looking to avoid gelatin. These marshmallows are firm to touch, roast nicely, melt under heat and when caught on fire they puff. Check out Soleil’s recipe, and enjoy.
