Martha Stewart Releases Vegetarian Cookbook 'Meatless'
It’s been brewing for a while. First, her all vegan episode of her show, and then her PSA on factory farming for Farm Sanctuary. It had to lead somewhere. The culmination of her all knowledge is now available in a new cookbook called “Meatless: More Than 200 of the Very Best Vegetarian Recipes”.
While the cookbook isn’t vegan and does have items like eggs and cheese, many of the recipes are totally plant based and incorporate a beautiful selection of beans, lentils, vegetables and whole grains.
Stewart writes in her introduction, “There are many reasons to forgo meat and reach for plant foods, whether you dabble in such a diet occasionally (the Meatless Monday trend is growing rapidly) or you’re a vegetarian every day of the week.” She discusses the health benefits of such a diet. Then, she gets into the ethics. She writes, “For some of us, it comes down to ethical concerns about animal welfare and the deplorable aspects of factory farming. For others, it’s a matter of the environment.”
As for how the TV host and chef eats personally, she told My San Antonio, “It is both lifestyle and diet and the fact that my daughter is almost a vegan. And two new grandchildren who are vegetarians. I have to get with the program. I actually still do eat fish, but very little meat.”
It looks like she was surrounded by those who choose not to eat animals and changed her diet as she learned more about the lifestyle. We’re all for that.
You can peek inside the newly released cookbook. I for one am thinking of whipping up the lentil and cashew hummus. Super yum!
