Gotham’s vegan scene is getting a new, deliciously gourmet addition – and the guy opening it isn’t even legal to drink yet.

Meet Jay Astafa – 20-year-old graduate of the National Gourmet Institute and soon-to-be-owner of Jay Kitchen somewhere in NYC. But first, he’s giving a preview of his amazing creations with a pop-up concept over two days at the Old Bowery Station.

“Myself and pastry chef Dani McGrath will be featuring an 8 course menu,” Astafa wrote on Facebook. “Ever since I became vegan, I always had a dream to cook in the culinary capital of the world, NYC. Going vegan inspired me to become a chef and change the world for animals through food. So happy that my dream will happen next week! :)”

If you’re interested in participating (and based on the menu below, you’d be crazy not to), jump here to reserve your spot before all of the sessions are sold out.
